Anniversary Rib Roast with Herbs.

 

1.5 kg Standing rib roast

2 tablespoons olive oil

¼ cup fresh herbs – oregano, thyme, rosemary

4 medium potatoes, peeled and halved

2 red capsicums, thickly sliced

Extra tablespoon olive oil

Small butternut pumpkin cut into chunks

 

Preheat oven to 180 degrees

Brush roast with olive oil  and season with half the herb mixture

Place roast in a baking dish

 

In a separate bowl, toss vegies with the remaining herbs and olive oil, set aside.

Roast beef for 60 mins for medium/rare. In last 30 mins of cooking time, add vegies to the roasting dish.

 

Enjoy.
